Seasoning and Flavoring

  • 1 teaspoon paprika For additional flavor.
  • 2 tablespoons tomato paste Enhances the bisque's depth.
  • salt and black pepper to taste

Vegetables
  • 1 medium onion, chopped
  • 1 stalk celery, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter For sautéing the vegetables.
Thickening Agent

Method
 

Preparation
  1. In a large pot over medium heat, melt the butter.
  2. Add chopped onion, celery, and minced garlic, sauté for about 5 minutes.
  3. Sprinkle flour over vegetables and stir for 1 minute until combined.
Cooking
  1. Gradually pour in seafood stock while stirring continuously until smooth.
  2. Incorporate tomato paste, Old Bay seasoning, paprika, salt, pepper, and cayenne, then bring to a simmer.
  3. Let the soup simmer for 20 minutes to meld flavors.
  4. Add shrimp and simmer for an additional 5 to 7 minutes, until shrimp turns pink and opaque.
  5. Gently fold in crab meat and heavy cream, warming through without boiling.

Notes

Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 2 months. Reheat on the stovetop to maintain texture.
