Preparation
- In a large pot over medium heat, melt 2 tablespoons of butter.
- Add 1 chopped onion, 1 chopped celery stalk, and 2 minced garlic cloves. Sauté for about 5 minutes until soft and fragrant.
- Sprinkle 2 tablespoons of flour over the sautéed vegetables and stir for another minute, ensuring it doesn’t burn.
Cooking
- Gradually add 4 cups of seafood stock while stirring continuously until the mixture is smooth.
- Mix in 2 tablespoons of tomato paste, 1 teaspoon of Old Bay seasoning, 1 teaspoon of paprika, salt, black pepper to taste, and a pinch of cayenne if desired.
- Bring to a gentle simmer and allow to cook for 20 minutes.
- Near the end of cooking, add the pound of shrimp and simmer for 5 to 7 minutes until they turn pink and opaque.
- Gently fold in the crab meat and 1 cup of heavy cream, warming through but do not let it boil.

Serve with crusty bread, a fresh salad, or cheesy grits. This bisque can be made ahead and frozen for up to 2 months.
