Preparation
- Cut the chicken into bite-sized pieces and season lightly with salt and pepper.
Cooking
- In a large skillet, heat 2 tablespoons of butter over medium heat. Add the chicken pieces and cook until lightly golden and just cooked through, about 6-8 minutes. Remove and set aside.
- Add another tablespoon of butter to the skillet and sauté the mushrooms and onions until soft and lightly browned, around 5 minutes.
- Stir in minced garlic, then sprinkle in 2 tablespoons of flour and cook briefly to eliminate the raw flavor, about 1 minute.
- Gradually add chicken broth, stirring constantly until the sauce thickens, approximately 3-4 minutes.
- Stir in Dijon mustard, return the chicken to the skillet, and lower the heat.
- Gently mix in the sour cream until creamy and smooth. Adjust seasoning as needed.
Notes
For best results, avoid overcrowding the pan and bring sour cream to room temperature before mixing. Let the dish rest to allow flavors to meld.
