- Preheat your oven to 400°F (200°C).
- Set up your breading station with three shallow bowls: one with flour, one with beaten eggs, and the third with a mixture of crushed cornflakes, garlic powder, paprika, salt, and pepper.
- Dip each chicken breast in flour, then in eggs, and then coat with the cornflake mixture, pressing gently to adhere.
- Place the coated chicken on a greased baking sheet, spacing them evenly.
- Lightly spray the tops with cooking spray or drizzle with olive oil.
- Bake for 25-30 minutes until golden brown and cooked through, with an internal temperature of 165°F (74°C).
Notes
Don't overcrowd the pan for even cooking. Let the chicken rest for a few minutes after baking to retain juices.
