Ingredients

For the chicken
  • 4 pieces Boneless, skinless chicken breasts
  • 2 cups Finely crushed cornflakes
  • 1/2 cup All-purpose flour Helps the coating stick
  • 2 large Eggs Beaten, for binding
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt To taste
  • 1 teaspoon Pepper To taste

Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Set up your breading station with three shallow bowls: one with flour, one with beaten eggs, and the third with a mixture of crushed cornflakes, garlic powder, paprika, salt, and pepper.
  3. Dip each chicken breast in flour, then in eggs, and then coat with the cornflake mixture, pressing gently to adhere.
  4. Place the coated chicken on a greased baking sheet, spacing them evenly.
  5. Lightly spray the tops with cooking spray or drizzle with olive oil.
  6. Bake for 25-30 minutes until golden brown and cooked through, with an internal temperature of 165°F (74°C).

Notes

Don't overcrowd the pan for even cooking. Let the chicken rest for a few minutes after baking to retain juices.
