For the Cheesecake Filling
  • 8 oz cream cheese, softened

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, brown sugar, and 1 teaspoon of vanilla extract until smooth.
  3. Beat in the eggs one at a time until well blended.
  4. In another bowl, mix the flour, baking soda, and salt, then gradually blend into the creamed mixture.
  5. Gently fold in the chocolate chips until evenly distributed.
  6. In a separate bowl, beat the cream cheese with powdered sugar and 1 teaspoon of vanilla until smooth and creamy.
Assembly and Baking
  1. Take a tablespoon of cookie dough, flatten it, and place a teaspoon of the cheesecake mixture in the center.
  2. Wrap the dough around the filling, rolling it into a ball.
  3. Place the cookie balls on the baking sheet and bake for 10-12 minutes or until golden brown.
