  • 1 can Black beans, rinsed Rinsing reduces sodium.
  • 1 cup Frozen corn Sweet corn complements the spicy salsa.
  • 1 cup Salsa Choose your favorite variety to control the heat level.
  • 1 cup Cooked rice
  • 1 packet Taco seasoning
  • 2 cups Shredded cheese (cheddar and Mexican blend) Half for mixing, half for topping.

Preparation
  1. Preheat your oven to 350°F (175°C) while you prepare the other ingredients.
  2. In a large bowl, combine the shredded chicken, black beans, corn, salsa, cooked rice, taco seasoning, and half of the cheese. Mix until well blended.
  3. Pour the mixture into a greased 9x13 baking dish, spreading it evenly.
  4. Sprinkle the remaining cheese on top for a delicious, cheesy crust.
  5. Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
  6. Serve warm, topped with crushed tortilla chips and fresh cilantro for a delightful crunch.
