  • 3 cups Cooked shredded chicken Rotisserie chicken works well for convenience.
  • 4 cups Fresh spinach Use crisp leaves for best texture.
  • 8 oz Cream cheese Room temperature for easier mixing.
  • 1 cup Sour cream Adds tanginess and creaminess.
  • 2 cups Mozzarella cheese, shredded Divided; use half in the mixture and half for topping.
  • 1 tsp Garlic powder For flavor enhancement.
  • 1 tsp Onion powder For additional seasoning.
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/2 cup Bread crumbs For crunchy topping.

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x13 baking dish with olive oil.
  2. In a large bowl, combine the shredded chicken, chopped spinach, cream cheese, sour cream, and half of the mozzarella cheese. Stir until well blended.
  3. Add garlic powder, onion powder, salt, and pepper to the mixture and stir to combine.
  4. Transfer the mixture to the prepared casserole dish and spread evenly.
  5. Sprinkle the remaining mozzarella cheese and bread crumbs over the top.
Baking
  1. Place the casserole in the oven and bake for 25-30 minutes, or until the cheese is bubbly and golden.
  2. Let it cool slightly before serving to allow flavors to meld.

Notes

Bring ingredients to room temperature before mixing for a smoother casserole. Use leftover cooked chicken for faster prep. Don't rush the baking to achieve a golden top.
