Ingredients
  

Main Ingredients
  • 2 cups cooked macaroni Use day-old macaroni for firmer bites.
  • 2 cups shredded cheddar cheese Sharp cheddar = more flavor.
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk
  • 1/2 cup breadcrumbs Plain breadcrumbs give even crispness.
  • 2 large eggs If mixture seems too loose, add one more egg white.
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine cooked macaroni, cheddar, Parmesan, milk, eggs, salt, and pepper. Stir until glossy and holds together.
  3. Grease a mini muffin tin well. Spoon the mac mixture into each cup about 3/4 full and press gently to compact.
  4. Sprinkle breadcrumbs on top of each cup.
Baking
  1. Slide the muffin tin into the oven and bake for 15-20 minutes, watching for golden, crispy tops.
  2. Let them cool for a few minutes in the tin before removing.
  3. Garnish with chopped green onions if desired and serve warm.

Notes

These bites can be made ahead of time and refrigerated for up to 24 hours before baking. Perfect as an appetizer or side dish for any meal.
