For the meatballs

  • 1 cup Grated cheddar cheese Adds a melty richness.
  • 2 tbsp Taco seasoning A blend of spices for flavor enhancement.
  • 1 tsp Onion powder
  • 1 tsp Salt
  • 1/2 tsp Pepper
For the enchilada sauce
  • 2 cups Enchilada sauce Store-bought or homemade.
For topping
  • 1 cup Shredded cheddar cheese For extra cheesy goodness.

Preparation
  1. Preheat your oven to 400°F (200°C) to prepare for baking the meatballs.
  2. In a large mixing bowl, combine ground beef, egg, grated cheddar cheese, taco seasoning, onion powder, salt, and pepper. Mix gently to avoid overworking the beef.
  3. Form the mixture into 15 meatballs and place them evenly spaced on a lined baking sheet.
Cooking
  1. Bake the meatballs for 25 minutes or until fully cooked. Broil for 1-2 minutes to achieve a golden brown crust.
  2. Reduce the oven temperature to 350°F (175°C). Pour 1/4 cup of enchilada sauce into a 9x13 baking dish, add the meatballs, and pour the remaining sauce on top.
  3. Sprinkle 1 cup of shredded cheddar cheese over the meatballs.
  4. Return to the oven and bake for an additional 15 minutes until the cheese is melted and bubbly.
  5. Allow the meatballs to rest for about 5 minutes before serving to help set the flavors.

Notes

Don't overcrowd the pan for even cooking. Bring ingredients to room temperature for even cooking, and use a meat thermometer to ensure the meatballs reach an internal temperature of 160°F (71°C).
