Preparation
- Preheat your oven to 400°F (200°C) to prepare for baking the meatballs.
- In a large mixing bowl, combine ground beef, egg, grated cheddar cheese, taco seasoning, onion powder, salt, and pepper. Mix gently to avoid overworking the beef.
- Form the mixture into 15 meatballs and place them evenly spaced on a lined baking sheet.
Cooking
- Bake the meatballs for 25 minutes or until fully cooked. Broil for 1-2 minutes to achieve a golden brown crust.
- Reduce the oven temperature to 350°F (175°C). Pour 1/4 cup of enchilada sauce into a 9x13 baking dish, add the meatballs, and pour the remaining sauce on top.
- Sprinkle 1 cup of shredded cheddar cheese over the meatballs.
- Return to the oven and bake for an additional 15 minutes until the cheese is melted and bubbly.
- Allow the meatballs to rest for about 5 minutes before serving to help set the flavors.
Notes
Don't overcrowd the pan for even cooking. Bring ingredients to room temperature for even cooking, and use a meat thermometer to ensure the meatballs reach an internal temperature of 160°F (71°C).
