Preparation
- In a large pot over medium heat, melt 2 tablespoons of butter.
- Add the chopped onion along with a pinch of salt, cooking until softened, about 5 minutes.
- Stir in minced garlic and cook for 30 seconds.
- Sprinkle in 2 tablespoons of flour and stir until it forms a thick paste, cooking for about a minute.
Cooking
- Slowly add 4 cups of chicken or vegetable broth while stirring.
- Add the diced potatoes and simmer until they are very tender, about 12-15 minutes.
- Stir in 2 cups of broccoli florets and cook until they are bright green and tender, about 4-6 minutes.
- Lower the heat and stir in 2 cups of milk and optional heavy cream.
- Gradually add the shredded cheddar, stirring until melted and smooth.
- Use an immersion blender to blend the soup slightly for a chunky texture.
- Taste and adjust seasoning with salt, black pepper, and a pinch of paprika if desired.
Notes
Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months. Reheat on the stove.
