  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

  • 1 cup buttermilk Can substitute with almond milk for dairy-free option
  • 2 large eggs
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the melted butter, buttermilk, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients. Gently stir until just combined; it’s okay if it’s a bit lumpy.
  5. Fold in the chocolate chips with a spatula.
Baking
  1. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  2. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  3. Let them cool in the tin for a few minutes before transferring to a wire rack to cool completely.

Notes

Fresh ingredients yield better flavor. The batter can be made the night before and refrigerated.
