Preparation
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a large bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix the melted butter, buttermilk, eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients. Gently stir until just combined; it’s okay if it’s a bit lumpy.
- Fold in the chocolate chips with a spatula.
Baking
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let them cool in the tin for a few minutes before transferring to a wire rack to cool completely.
Notes
Fresh ingredients yield better flavor. The batter can be made the night before and refrigerated.
