Main Ingredients
  • 1 pound Sirloin steak Opt for well-marbled pieces for best flavor and tenderness.
  • 2 tablespoons Cajun seasoning Use a blend you enjoy or make your own for a custom touch.
  • 12 ounces Rigatoni pasta Its ridges hold onto the creamy sauce beautifully.
  • 1 cup Freshly grated Parmesan cheese Always choose freshly grated for a creamier sauce.
  • 3 cloves Garlic Fresh garlic amps up the aroma and flavor.
For the Sauce
  • 2 tablespoons Butter For sautéing the garlic.
  • 2 tablespoons Flour To thicken the sauce.
  • 1 cup Milk Gradually whisk into the sauce.

Method
 

Cooking the Pasta
  1. In a large pot of salted boiling water, cook the rigatoni until al dente according to package directions; reserve a cup of pasta water before draining.
Preparing the Steak
  1. Pat the steak chunks dry with paper towels and toss them in Cajun seasoning.
  2. Heat olive oil in a large skillet over medium-high heat, then sear the steak until browned, about 4-5 minutes. Remove from pan and set aside.
Making the Sauce
  1. In the same skillet, lower the heat and melt butter, then add minced garlic and sauté until fragrant.
  2. Stir in the flour and let it cook for about a minute, then gradually whisk in milk, stirring continuously until slightly thickened.
  3. Slowly stir in the grated Parmesan until melted, adding reserved pasta water as needed to keep the sauce smooth.
  4. Mix in the cooked rigatoni and the seared steak until everything is well-coated.
Serving
  1. Garnish with additional Parmesan and chopped parsley before serving immediately.

Notes

Don’t overcrowd the pan when searing the steak to ensure it gets a nice sear. Use a meat thermometer for best results, and prep all ingredients before starting.
