  • 1 tablespoon olive oil
  • 14 ounces smoked sausage (kielbasa) sliced
  • 1 medium onion chopped
  • 2 cups chopped cabbage fresh green cabbage preferred
  • 15 ounces diced tomatoes with juices
  • 4 cups chicken or vegetable broth
  • 2 cloves garlic minced
  • 1 medium carrot sliced
  • 2 stalks celery sliced

Preparation
  1. Heat olive oil in a large soup pot over medium heat.
  2. Add sliced smoked sausage and cook for 5-7 minutes until golden brown.
  3. Add chopped onion, sliced carrots, and celery; cook for 3-4 minutes until onion softens.
  4. Stir in minced garlic and cook for about 30 seconds until fragrant.
  5. Pour in diced tomatoes with juices and chicken or vegetable broth, scraping any browned bits off the pot.
  6. Stir in chopped cabbage and bring the soup to a gentle simmer.
  7. Lower the heat and cook for about 25-35 minutes until the cabbage is tender.
  8. Taste and season with salt, black pepper, and paprika as needed.
  9. Add a squeeze of lemon or a splash of vinegar if the soup tastes flat.

Notes

This soup is customizable: for a vegetarian option, swap sausage for lentils or chickpeas. To enhance spice, add jalapeƱos or red pepper flakes. The recipe can easily be doubled.
