  • 8 oz cream cheese, softened Room-temp cream cheese makes for easier mixing.
  • 12 oz white chocolate or candy melts Melt smooth and set glossy.
  • 1 piece pink candy melts or colored icing for noses Use for decoration.
  • mini pieces chocolate chips or edible eyes For decoration.
  • optional to taste pastel sprinkles For extra flair on decoration.

Method
 

Preparation
  1. Crush the cookies in a food processor until finely crushed, resembling sandy crumbs.
  2. Mix the softened cream cheese with the cookie crumbs until a smooth, sticky dough forms.
  3. Scoop small portions (about 1 tablespoon) and roll them into balls, pinching the top gently to form ears.
  4. Place the bunny shapes on a parchment-lined baking sheet and refrigerate for at least 30 minutes.
Dipping and Decorating
  1. Melt the white chocolate or candy melts in the microwave or over a double boiler until smooth and glossy.
  2. Dip each chilled bunny ball into the melted chocolate, tap the fork to remove excess, and decorate with eyes, a pink nose, and sprinkles before the coating sets.
Setting
  1. Allow the bunnies to set at room temperature or refrigerate for another 10-15 minutes until firm.

Notes

Chill the scooped balls while melting chocolate to speed up dipping. If coating cracks, let them warm up for 5 minutes before dipping. For a nutty flavor, add almond extract to the dough.
