  • 2 pieces Chicken breasts Preferably organic, free-range for best flavor and texture
  • 8 ounces Pasta (penne or fusilli) These shapes hold the sauce well
  • 1 cup Cherry tomatoes Look for ripe and juicy tomatoes
  • 1/4 cup Fresh basil Essential for authentic bruschetta flavor
  • 3 cloves Garlic Use fresh cloves for a pungent aroma
  • 2 tablespoons Olive oil For cooking chicken and vegetables

  1. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Season the chicken breasts with salt and pepper and add them to the skillet. Cook until browned and cooked through, about 6-7 minutes per side. Remove and let rest before slicing.
  3. In the same skillet, add minced garlic and halved cherry tomatoes. Sauté for 2-3 minutes until the tomatoes start to soften.
  4. While the vegetables are cooking, boil the pasta according to package instructions. Drain and add to the skillet with the tomatoes.
  5. Toss in the sliced chicken and fresh basil, ensuring everything is well combined.
  6. Plate the pasta, and top with Parmesan cheese if desired for an extra touch!

Notes

Prep all ingredients beforehand to speed up cooking. Do not overcrowd the pan for even cooking. Allow chicken to rest before slicing for juicier meat.
