Preparation
- Preheat the oven to 350°F (175°C). Grease a 9x5 loaf pan and line it with parchment paper.
- In a small saucepan, melt the unsalted butter over medium heat, stirring until golden with brown spots and smelling nutty. Remove from heat to cool slightly.
- In a large mixing bowl, whisk together the mashed bananas, light brown sugar, and granulated sugar until glossy and well combined.
- Beat in the eggs, vanilla extract, and Greek yogurt until smooth. Gradually whisk in the browned butter.
- In another bowl, sift together the all-purpose flour, baking soda, fine salt, and cinnamon. Stir to blend.
- Gently fold the dry ingredients into the wet mixture until no flour streaks remain, but don't overmix; a few lumps are okay.
- If desired, fold in chopped walnuts or chocolate chips.
Baking
- Pour the batter into the prepared loaf pan. Optionally, run a buttered knife along the top for decoration.
- Bake for 55 to 65 minutes, checking for doneness with a toothpick around 52 minutes; it should come out with moist crumbs.
- Allow the loaf to cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
Notes
Don’t overmix the batter as it can lead to a tough texture. Use ripe bananas for the best flavor. Cool completely before slicing for the best results.
