Ingredients
  

Dry Ingredients
  • 1 cup bran cereal Adds chew and fiber.
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar Adjust based on taste.
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup applesauce Unsweetened works best.
  • 1/2 cup milk Any milk or milk alternative is fine.
  • 1/3 cup vegetable oil Use mild vegetable oil for neutral flavor.
  • 1 large egg
  • 1 teaspoon vanilla extract
Optional Add-ins
  • to taste raisins or nuts Soak raisins if very dry.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, stir together bran cereal, flour, sugar, baking powder, and salt until evenly combined.
  3. In another bowl, whisk together applesauce, milk, oil, egg, and vanilla until smooth and glossy.
  4. Pour the wet mixture into the dry ingredients, and fold gently with a spatula until just combined; the batter should be thick and slightly lumpy.
  5. If desired, fold in raisins or chopped nuts.
Baking
  1. Spoon the batter into the muffin cups, filling each about two-thirds full.
  2. Bake for 20–25 minutes, until the edges are brown and a toothpick comes out clean.
  3. Allow to cool in the tin for 5 minutes before turning out onto a rack.

Notes

These muffins are forgiving and can be adapted with various mix-ins. For a simple variation, try adding 1/2 teaspoon cinnamon or 2 tablespoons molasses.
