  • 1 cup All-purpose flour For the crispy coating; King Arthur Flour is recommended.
  • 1 teaspoon Garlic powder Enhances the overall taste profile.
  • 1 teaspoon Paprika Adds smokiness and beautiful color.
  • 1 teaspoon Salt Essential for seasoning.
  • 1 teaspoon Black pepper Essential for seasoning.
  • 1 cup Milk For the egg mixture.
  • 2 pieces Eggs For the egg mixture.
  • 2 tablespoons Soy sauce For the egg mixture.

Method

Preparation
  1. In a large zip-top bag, combine flour, garlic powder, paprika, salt, and pepper. Seal the bag and shake to mix the seasoning.
  2. Add chicken pieces to the bag and shake until fully coated in the seasoned flour.
  3. In a shallow bowl, whisk together milk, eggs, and soy sauce until smooth.
  4. Remove chicken from the flour mixture, dip each piece into the egg mixture, then return to the zip-top bag for a second coating.
Cooking
  1. Heat several inches of oil in a deep skillet over medium-high heat until shimmering (approximately 350°F or 175°C).
  2. Carefully place the chicken into the hot oil, working in batches if necessary. Fry until golden brown and crispy on both sides and the internal temperature reaches 165°F (74°C).
  3. Transfer the cooked chicken to a paper towel-lined plate to drain excess oil. Let rest briefly, then serve hot.

Notes

Don't overcrowd the pan to maintain oil temperature and ensure crispy chicken. Use a meat thermometer to check doneness, and let the chicken rest before serving for best results.
