Preparation
- Pat the beef dry and season it with salt and pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the beef in a single layer, browning it for 3-4 minutes on each side until golden brown.
Cooking
- Lower the heat to medium and add the chopped onions. Cook for about 3-4 minutes until softened.
- Stir in minced garlic and cook for an additional 30 seconds.
- Pour in 2 cups of beef broth and 1 tablespoon of Worcestershire sauce, scraping up any browned bits from the bottom.
- Add onion and garlic powders; adjust seasoning as necessary.
- Cover the skillet and let it simmer until the beef is tender; approximately 25-35 minutes for sirloin or up to 90 minutes for chuck.
- Mix 2 tablespoons of cornstarch with 2 tablespoons of water and stir into the sauce, letting it bubble for another 1-2 minutes until thickened.
Serving
- Plate the beef and gravy over hot cooked rice, adding extra broth if desired.
Notes
Don't overcrowd the pan during searing. Bring beef to room temperature for even cooking. You can double the gravy easily if serving a crowd.
