  • 1 can Black beans, rinsed and drained
  • 1 can Diced tomatoes (fire-roasted recommended)
  • 1 packet Taco seasoning Feel free to customize to taste
  • 4 cups Beef broth Consider swapping half for water
  • 1 cup Corn (canned or frozen)
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced

Preparation
  1. In a large pot over medium heat, brown the ground beef with chopped onion and minced garlic until the meat is fully cooked, about 8-10 minutes. Drain excess fat.
  2. Stir in black beans and corn, mixing well to combine.
  3. Add the diced tomatoes and taco seasoning, mixing until blended.
  4. Pour in beef broth and water. Bring to a boil.
  5. Reduce heat and simmer for 20-30 minutes, allowing flavors to meld.
  6. Add salt and pepper to your preference before serving.

Notes

This recipe is customizable; try adding diced jalapeƱos for heat, or replace ground beef with lentils for a vegetarian version. Letting the soup sit for 5-10 minutes before serving enhances the flavors.
