Meatloaf Ingredients
  • 1 1/4 cups old fashioned rolled oats Use old-fashioned oats, not instant.
  • 1/4 cup milk Room-temperature milk is ideal.
  • 1 lb ground beef
  • 2 large eggs, beaten Room-temperature eggs mix easier.
  • 1 pkg dry onion soup mix
  • 1 clove garlic, minced Fresh garlic = bigger flavor.
  • 1 T Worcestershire sauce
  • 3 T ketchup
  • 1/2 tsp pepper
Glaze Ingredients
  • 1/4 cup ketchup (for topping)
  • 1 tsp Worcestershire sauce (for topping)
  • 1 tsp yellow mustard (for topping)

Method
 

Preparation
  1. Put the oats in a large bowl and pour in the milk. Stir so each oat is coated, then let it sit about 15 minutes until the oats soak up the milk.
  2. Add the ground beef, beaten eggs, dry onion soup mix, minced garlic, Worcestershire sauce, ketchup, and pepper.
  3. Use your hands to gently mix everything until just combined, being careful not to overwork the mixture.
  4. Press the meat mixture into a 9 x 9-inch baking pan and shape it into a loaf about 1 3/4 inches thick. Smooth the top with a wet spatula.
Cooking
  1. Preheat the oven to 375°F and bake the meatloaf for 30 minutes.
  2. Meanwhile, whisk together ketchup, Worcestershire sauce, and yellow mustard until smooth.
  3. After 30 minutes, remove the meatloaf, brush the glaze all over, and return it to the oven for another 10 minutes.
  4. Let the meatloaf rest for 5 minutes before slicing.

Notes

For a different flavor, try stirring in chopped parsley or swapping the topping for a BBQ glaze. Always check that the center is about 160°F before serving.
