  • 1 pound Bacon, Cut Into Thirds Thinner slices crisp faster
  • 1 pound Lil Smokies small sausages Room temp for even cooking
  • 1 stick Butter Unsalted controls salt levels
  • 2 cups Brown Sugar Packed for best caramel

Method
 

Preparation
  1. Preheat your oven to 375°F and line a baking dish with foil for easy cleanup.
  2. Cut the bacon into thirds and wrap each lil smokie tightly; secure with a toothpick if needed.
  3. Place all the wrapped smokies in a single layer in the dish so they brown evenly.
Cooking
  1. Melt the stick of butter in a small saucepan over low heat, and stir in 1 cup of brown sugar until it dissolves and looks glossy.
  2. Pour the butter and brown sugar mixture over the arranged smokies, and then sprinkle the remaining cup of brown sugar evenly on top.
  3. Bake for about 15–20 minutes until you smell caramel and see the edges turn golden.
  4. Turn the oven up to 400°F and roast for 5 minutes or longer, watching closely, until the bacon crisps and the sugar bubbles thickly.
  5. Let them rest for 3–4 minutes so the glaze sets; the sauce will thicken and the bacon will keep crisping slightly.
Serving
  1. Serve warm on a platter and watch them disappear.

Notes

Use pre-cut bacon for quicker prep. If sugar burns, lower the oven and tent with foil for gentle caramelizing. For heat, add a pinch of cayenne into the sugar mix.
