Preparation
- Preheat your oven to 375°F and line a baking dish with foil for easy cleanup.
- Cut the bacon into thirds and wrap each lil smokie tightly; secure with a toothpick if needed.
- Place all the wrapped smokies in a single layer in the dish so they brown evenly.
Cooking
- Melt the stick of butter in a small saucepan over low heat, and stir in 1 cup of brown sugar until it dissolves and looks glossy.
- Pour the butter and brown sugar mixture over the arranged smokies, and then sprinkle the remaining cup of brown sugar evenly on top.
- Bake for about 15–20 minutes until you smell caramel and see the edges turn golden.
- Turn the oven up to 400°F and roast for 5 minutes or longer, watching closely, until the bacon crisps and the sugar bubbles thickly.
- Let them rest for 3–4 minutes so the glaze sets; the sauce will thicken and the bacon will keep crisping slightly.
Serving
- Serve warm on a platter and watch them disappear.
Notes
Use pre-cut bacon for quicker prep. If sugar burns, lower the oven and tent with foil for gentle caramelizing. For heat, add a pinch of cayenne into the sugar mix.
