For the meatballs
  • 1 lb Ground beef (80/20) Opt for 80/20 for a moist meatball; leaner cuts may dry out.
  • 1/2 cup Breadcrumbs Use as a binder for the meatballs.
  • 2 tablespoons Green onion (chopped) Adds vibrant flavor and color.
  • 2 tablespoons Soy sauce Choose low-sodium for less saltiness.
  • 1 tablespoon Sesame oil Provides a nutty aroma and enhances flavor.
  • 1 tablespoon Fresh ginger (grated) Offers a zesty kick; use fresh if possible.
  • 1 tablespoon Brown sugar Balances the flavors with sweetness.

Method
 

Preparation
  1. In a large bowl, mix ground beef, breadcrumbs, green onion, garlic, soy sauce, sesame oil, ginger, and brown sugar until uniform.
  2. Form the mixture into small balls, about 1 inch in diameter.
  3. Place the meatballs in the crockpot, adding extra soy sauce on top if desired.
Cooking
  1. Set the crockpot to low and let the meatballs cook for 6-8 hours or on high for 3-4 hours.
  2. Once cooked, sprinkle with sesame seeds just before serving.

Notes

Don’t overcrowd the pan when cooking in batches. Use a meat thermometer to ensure the meatballs reach an internal temperature of 160°F (71°C) for safe consumption. Let them rest before serving to redistribute juices.
